Happy Father’s Day, Dads.
I have the privilege of spending time with and feeding the Dads in my life today. My parents are set-up in the RV spot next to us for an extended weekend. My in-laws live in the next town over. Of course, the father of my children will be here, sitting with his feet up. As it should be.
When we have company, I’m all about keeping the meal simple. When we had the neighbors over last week, I opted for a taco bar. I’ve decided to do that again today.
I added shredded cheese to my shopping list this week but I did not add lettuce. I’m going to try chopped spinach this time. That means I’m only using 1 non-list ingredient.
I know not all of today’s guests like guacamole. But, Mike does. I’ll have Miranda make a dish of “Easy Guacamole.”
- 1/4 tsp salt per avocado
- 2 Tbsp salsa per avocado
- 1/2 to 3/4 tsp garlic powder per avocado
- 1/2 tsp lemon or lime juice per avocado
- chopped cilantro
- chopped onion or onion powder
- Mix together.
