Capsule Kitchen in a Tiny Home - 30 Days to Simplicity: Day 07

Day 7 of my 30 day blog series journaling my experiment with a Capsule Kitchen. The plan? Use 33 ingredients to create all our meals for three months. If you just joined me you can either start at Day 1 or view all Capsule Kitchen posts.

On Day 6 I made a crockpot of chili. There are only four of us in the family, so I knew there would be left-overs planned-overs.

Planned-Overs

I try to make more than a meal’s worth when I cook, especially now that all 4 of us have differing eating schedules most days. When lunch time comes around, I like to have already prepared food available.

This morning the weather was clear after 4 days of rain and clouds. We were going a bit stir crazy in the RV so we decided to head out to one of our favorite places in Michigan - Ludington State Park.

I packed up the leftover chili from last night’s meal and the non-list oyster crackers from the pantry for a hot lunch.

We found a picnic table along the Big Sable River. We heated up the chili on our portable single burner stove and enjoyed a bowl of chili before walking some trails.

After a little time in the woods, we made our way to the shore of Lake Michigan for a cup of coffee/tea. Love the portable stove for that, too.

Tonight’s Meals

We had both supper and dinner tonight. And I didn’t prepare either one.

Supper was a scoop of ice cream at House of Flavors in Ludington.  I had Tennessee Toffee—toffee ice-cream layered with sweet whiskey sauce and Heath bar pieces. No - none of these ingredients are on my Capsule Kitchen list. But this meal sure was simple.

Dinner was a YOYO meal (You’re On Your Own). Mike made himself a peanut butter/banana/granola tortilla wrap.

Prepare or Reheat?

    Yay for Michigan! We are from the Detroit area but now reside in NC. Just visited there last week. So nice and cool….

    Lonna,

    I would imagine you enjoyed the coolness of Michigan compared to NC. But I would like a little bit more heat. It is summer after all. ;)
